Over time, and especially with exposure to light and elevated temperatures, the Olive Oils in the presence of air, will oxidize and eventually become rancid. This is why one should keep the Olive Oils free of odors, protected from light and the least possible in contact with air. For example, place them in dark bottles, never on colorless bottles and especialy jugs.
